Oven Baked Salmon and Veggies

Another super simple recipe! Just a little bit of preparation and then throw it in the oven for about 15min or until tender. I just love salmon and could eat it every day of the week.

I love making this with baked sweet potato and zucchini, but you could also choose carrots, capsicum (bell peppers), eggplant or any of your favourite veggies.

Preheat your oven to 200 C /400 F, line your baking dish with alfoil

Season your salmon with salt & pepper, oregano flakes, lemon (and garlic if you wish) – set aside

Cut your zucchini and sweet potato into strips (like potato chips), season with olive oil, salt and pepper to taste – place in your baking dish and bake in the oven for 15 minutes

Turn /toss your veggies, and then add the salmon (skin side down) into the middle of your baking dish with veggies around the sides

Bake in the oven for a further 15min – or until the salmon flakes
