Zucchini Pasta

Super fun and easy to make, I love having zucchini pasta for lunch and just as wonderful for a light dinner too.

You can always create the zuchinni spiral pieces with a peeler, but do yourself a favour and invest in a spiral tool which makes this recipe such a breeze.

Ingredients

– 1x Zucchini (courgette)

– 1x Egg

– Sliced Apple Pieces

– Handful of Pumpkin Seeds

– Extra Virgin Olive Oil

– Ground Pepper and Rock Salt

Method:

Toast the pumpkin seeds in a frying pan on medium heat until the seeds are golden or you can skip this part if you buy pre-roasted

Spiral the Zuchinni into long thin pasta pieces and arrange in a heap on your plate

Drizzle with Olive Oil

Cook 1 egg sunny side up and place on top of your Zucchini

Ground Salt and Pepper to taste

Add some sliced apple pieces
