Oven Baked Salmon and Veggies

Another super simple recipe! Just a little bit of preparation and then throw it in the oven for about 15min or until tender. I just love salmon and could eat it every day of the week. I love making this with baked sweet potato and zucchini, but you could also choose carrots, capsicum (bell peppers), eggplant or any of your favourite veggies. Preheat your oven to 200 C /400 F, line your baking dish with alfoil Season your salmon with salt & pepper, oregano flakes, lemon (and garlic if you wish) - set aside Cut your zucchini and sweet potato into strips (like potato chips), season with olive oil, salt and pepper to taste - place in your baking dish and bake in the oven for 15 ....

Bliss Balls

Such a cinch to make, these Bliss Balls are a great healthy snack alternative to reach for when those cravings hit. Ingredients: -5 Medjool Dates -1 Cup Cashews -1/2 Cup Almonds -1/2 Cup Oats -1/2 Cup Desiccated Coconut -1/4 Cp Cacao Powder -1 tbsp Coconut Oil -Handful Cranberries Method: Soak Medjool Dates for 15 minutes and then drain Blend in a food processor all ingredients - start with Cashews, Almonds and Oats first and then slowly add remaining ingredients. Zucchini Pasta

Super fun and easy to make, I love having zucchini pasta for lunch and just as wonderful for a light dinner too. You can always create the zuchinni spiral pieces with a peeler, but do yourself a favour and invest in a spiral tool which makes this recipe such a breeze. I love getting creative with lunch time salads and get really excited when I see figs in season in the fruit & veggie section.
